Simpsons Double Roast Crystal - DRC

Unlike traditional roasted malts, Simpsons DRC® (Double Roasted Crystal) is produced using a unique roasting process that develops deep malt complexity without the pronounced roast bitterness or astringency found in black, chocolate malts or traditional dark crystal varieties. This allows it to be used at higher percentages in the grist without being overwhelming or astringent.
DRC® occupies a similar flavour space to malts like Caraaroma® or Special B®, sharing their rich dark fruit and caramel character, but it offers its own distinct flavour. Many brewers find DRC® to be smoother and more rounded, with a greater emphasis on caramel depth and less of the intense burnt sugar or heavily raisined character that can dominate when using Special B® or W. Rather than replacing these malts outright, DRC® provides another option for building malt complexity, whether used on its own or alongside them.
DRC being an English malt also leans into traditional English styles like dark mild or ESB. It's an excellent choice when you're chasing layers of malt character without adding harsh roast flavours. Styles such as Imperial Stouts, Foreign Extra Stouts, Old Ales, Barleywines, Belgian Dark Strong Ales, Dark Milds and robust Brown Ales all benefit from the rich caramel character.
