Beer Yeast Guide

Knowing what temperature, attenuation and style your selected brewers yeast is always important. This guide serves to help you select a yeast strain suitable for the style of beer you are brewing or with desirable characteristics for your next brew. At the very least this guide will provide a quick way to find out your fermenting temperature.

Yeast characteristics definitions

Attenuation

the percentage of available sugars this yeast will consume. essentially how much of the wort the yeast will ferment. higher attenuations give a dryer finish while lower attenuation implies more body and sweetness.

Fermenting Temperature 

The ideal temperature this yeast will ferment at to yield best results. fermenting your beer outside of this range can promote the formation of off-flavours, attenuation issues and overproduction of esters or polyphenols.

Alcohol Tolerance

How much alcohol the yeast can handle before it begins to die. If you plan on fermenting a beer that will be close to your yeasts alcohol tolerance make sure to increase your yeast dosage. If you are unsure about how much yeast you require contact us or use a helpful online calculator.

Flocculation Speed

How fast yeast will drop out of suspension post fermentation. faster flocculation speeds typically mean conditioning times are shorter and beer will become clearer faster.
