Weyermann® Bohemian Floor Malt is produced from Bojos and Malz barley varieties; prized Bohemian barley varieties selected for their superior brewing character. Unlike modern high-volume malting, this malt is made using the traditional floor malting process: green malt is spread by hand across large stone floors and turned regularly by maltsters over several days, allowing it to germinate slowly and evenly in the cool air. This unhurried, artisanal method produces a malt of extraordinary depth that kilning alone struggles to replicate.
The result is a rich, intense malt aroma with distinct notes of honey and fresh biscuit. This is a true terroir malt, expressing the character of its origin in the finished beer. It can be used as the sole base malt for full-bodied, malt-forward Bohemian styles, or blended to add complexity to almost any beer style.
Modern drum malting moves grain through the germination process quickly and at scale. Floor malting takes longer and the slow germination stage allows the kernel to develop more complexity. That slower process is reflected in the finished malt, and it's a major reason traditional Bohemian lagers have the flavour profile they do.
Suggested usage: Czech Pale Lager, Bohemian Pilsener, Czech Amber and Dark Lager, Bohemian Bock, Pale Ale, Saison, Strong Ale, Wheat Wine, Wheat Beer, and historical styles including Gose, Lichtenhainer, and Gruitbier. Suitable as up to 100% of the grain bill.
