Pilsen MD Malt is produced from select 2-row European summer barley, chosen for its low protein content and reliable brewing performance. This low protein content can help to produce brilliant bright beers with minimal conditioning.
The result is a pale, clean base malt with a delicate malt character. Where a floor malted variety like a Bohemian malt brings intensity and complexity out, Pilsen MD sits back and lets other ingredients do the talking. Its subtle sweetness and neutral profile make it an ideal canvas for hops, yeast character, and water chemistry to shine through. Think bright but subtle malt character like you'd find in beers such as Jupiler, Stella Artois, and Saison Dupont.
Its high enzymatic activity means it carries enough diastatic power to convert not just itself, but a large portion of adjuncts and specialty grains alongside it. Pilsen MD is well suited to single-step mashing schedules, removing the need for protein or saccharification rests. It can be used as the sole base malt across virtually any beer style, from lagers and Pilseners where a light colour and clean palate are essential, through to ales, wheat beers, and adjunct-heavy recipes.
Suggested usage: Pilsener, Pale Lager, Pale Ale, Wheat Beer, Session Ale, and any recipe requiring a clean, highly fermentable base. Suitable as up to 100% of the grain bill.
