A bittering hop from the UK perfect for use in British beers of all kinds.

Target is primarily a bittering hop, commonly used to impart bitterness in beer rather than contributing significant flavor or aroma.

Its aroma profile includes fresh green sage, spicy and peppery notes, with subtle hints of citrus marmalade. When used in whirlpool or dry hopping, its spice character becomes more pronounced. Target provides clean bitterness with moderate alpha acid levels.

Breeding:

Developed by Wye College, Target was released in 1992. It is related to Challenger and traces its lineage to Northern Brewer and Eastwell Goldings.

Brewing:

Target is typically used early in the boil to confer a solid bitterness or as a whirlpool or dry hop to impart notes of sage, spice and citrus marmalade. English ales utilising both boil and low-moderate dry hopping develop a well balanced finish. This variety has a higher than ideal cohumulone content and as a result can lead to a slightly sharper bitterness than other varieties when used as a boil addition - pairing this hop with a variety with a lower cohumulone content in the boil is a great way to unlock the traditional flavour of target while also bringing through a softer bitterness.
