This kit offers a delightful balance of banana and clove notes, a smooth, creamy mouthfeel, and a hazy golden pour. Perfect for both novice and seasoned brewers, simply pour, ferment, and enjoy.

Hefeweizen, a traditional German wheat beer, is renowned for its refreshing and complex flavour profile. Brewed with a significant proportion of wheat malt, it pours a hazy, golden hue crowned with a thick, frothy white head. The hallmark of a Hefeweizen lies in its distinctive aroma and taste, dominated by notes of ripe banana and subtle clove, resulting from the unique yeast strains used in fermentation. These fruity and spicy characteristics are balanced by a smooth, creamy mouthfeel and a slight tartness, making it an incredibly drinkable and satisfying beer.

Tips for best results:

When it comes to this beer style it's all in the yeast. You'll notice that compared to most of our other fresh wort kits the number of options for yeast here is substantially smaller. We've found the two yeast strains below are the best options for getting the authentic flavours of the world's best hefeweizens, most importantly isoamyl acetate which is responsible for the banana flavour. Make sure to pay close attention to your fermentation temperature and, if possible, ferment on the warmer side of your chosen strains fermenting temperature to get the yeast to produce more of those delicious banana esters. Open fermentation, particularly at the start of ferment, or slightly under-pitching your yeast can also help bring these flavours out. 

When it comes time to package your beer we'd recommend carbonating to a slightly higher 2.9-3.5 volumes of CO2 to really help the flavours pop.

Recommended Dry Hops:

No dry hops recommended for this fresh wort kit.

Instructions:

1. Sanitise your fermenter and brewing equipment.
2. Ensure the temperature of the fresh wort is within range of your selected yeast strains ideal fermentation temperature.
3. Pour the contents of the fresh wort kit into your sanitised fermenter. Pour the fresh wort hard into your fermenter. Splashing of the wort allows the wort to dissolve oxygen which ensures a healthy fermentation.
4. Pitch the yeast into the wort.
5. Add the recommended dry hops (if applicable), as fermentation is nearly finished.
6. Ferment your beer until the gravity is stable.
7. Bottle or keg your beer.
8. Enjoy!
