Heavily peated malt made from Scottish 2-row barley, dried over Highland peat fires.
Heavily smoked base malt made from Scottish barley and dried over peat fires. Phenol content typically ranges 40-50 ppm, giving strong smoke character similar to Islay whiskies. Smoke intensity is clean, earthy, and phenolic (burnt wood, iodine, campfire).
Primarily for whisky or smoked-style beers. Functions as a base malt with full enzymatic activity retained. This means it can make up 100% of the grist if desired, although the peat intensity will be very intense. Most distillers use 5-25% for noticeable smoke without dominating flavour, if you're going for a full intensity smoked character we would recommend increasing this dosage even further.
If distilling, phenolic compounds from the peated malt carry over strongly into the vapor phase. The highest concentrations typically appear in the early heads and late tails fractions, but phenols have variable volatility and will appear throughout the full range of the run in most cases. Careful cut management can help control the final smoke profile with wider cuts giving more peat intensity, while tighter hearts cuts produce a cleaner, lighter spirit. Over time in cask, the sharper phenolic notes tend to soften through oxidation and esterification, leaving a more rounded, integrated peat backbone without losing the core smoky character.
